What happens if you press clutch and gas?

It won't damage the engine, but it will burn out the clutch faster. In order to start from a stop you have to press on the accelerator while depressing the clutch. Just don't “ride the clutch” which means once you are going, don't continue to depress the clutch in any way until you are ready to switch gears.

Should you set gas or bite point first?

If you try to find the biting point first without gas, there is a higher risk you may stall. The gas should always be set first, however in a diesel it is usually easier and more forgiving to move away if you have forgotten to set the gas.

Can you let go of clutch without gas?

You can, but unless your engine is well tuned and/or you're on a slight downgrade, your engine is likely to stall. Of course if you're in neutral or the engine is not running, gas is not needed.

Do you throttle before or after clutch?

In general, you want to roll off the throttle and squeeze in the clutch prior to up-or-down shifting. After upshifting, you should release the clutch and roll on the throttle. The sequence and timing of the steps is what makes for smooth and precise shifting.
